White Temple Tea from A.C. Perch's Thehandel, light and fruity

White Temple Tea from A.C. Perch's Thehandel is a loose-leaf blend of white tea and candied fruits. Pineapple, mango, and papaya are visible as pieces among the leaves and give the light infusion its sweetness.

White Temple Tea is the fruity house blend from the Copenhagen tea shop A.C. Perch's Thehandel. Resting on a delicate base of white Mao Feng and Silver Needle are candied pineapple, mango, and papaya, along with orange peel, strawberry, redcurrant, apricot, and sour cherry. There are 175 grams of loose tea in the round tin, and 100 grams in the rectangular one.

Once brewed, White Temple Tea smells of pineapple and orange peel, with the mild sweetness of candied mango underneath. In the cup, it remains light, barely colored—more of a pale gold than a strong infusion.

On the tongue, it is soft and sweet, without the need for sugar, as the candied fruits provide their own sweetness. The pineapple and orange linger the longest, with the berries providing a subtle tart contrast. The white tea stays in the background, supporting the blend rather than taking center stage. As a result, this Perch's Thehandel blend tastes more like an orchard than a tea room.

A loose tea for the large teapot

Use eighty-degree water, about six grams per liter, and let the blend steep for seven minutes. Boiling water should be avoided here, as it draws out a bitterness from the delicate white leaf that it would not otherwise possess.

As a loose tea, White Temple Tea reveals what it is made of, as large leaves and whole fruit pieces visibly expand in the pot. On warm days, it can be brewed cold as a bright summer drink, served in a glass with fresh pineapple and a slice of orange.

The round tin comes in a gift box with a ribbon and can be refilled again and again. Under the same name, there is a White Temple in pyramid bags, which is blended according to its own recipe, and a second loose tin is available with the Queens Blend.

White tea, the gentlest of all production methods

White tea is the least processed of all tea varieties; after picking, it is simply withered and dried, without rolling or oxidation. Silver Needle consists exclusively of the closed buds, which are covered in a silvery down that gives the tea its name.

Mao Feng adds the youngest leaves alongside the buds, making the base slightly fuller. Because this base note is so subtle, it tolerates candied fruit better than a strong black tea, which would have to compete with the sweetness.

The fruits are candied because this is the only way they can survive in a dry blend without transferring moisture to the leaves. The sugar draws the water out of the fruit pulp; the pieces remain loose and can be distributed evenly with a spoon. When brewed, they release both their aroma and a little sweetness, and that is exactly what makes this tea well-rounded without any additives.
