Cultivation and Processing
Hey, wine lovers! Would you like to taste something truly special? Then the Wieninger Ried Ulm 1ÖTW Wiener Gemischter Satz DAC 2021 is just the thing for you.
The grapes for this wine are grown on the famous Ried Ulm on the Nussberg. The soil of the very steep southern slope consists of shell limestone with a limestone subsoil, complemented by the microclimate right by the Danube. All of this gives the wine its unmistakable character.
These vineyards have been cultivated according to biodynamic principles since 2008. At Weingut Wieninger, biodynamics permeates all work in the vineyard. Fritz Wieninger views the soil, the plants, and the entire estate as a harmonious whole—a form of circular economy where everything is connected. Natural biodynamic preparations harmonize all organisms involved in the process, which leads to greater resilience of the vines and higher wine quality.
9 different grape varieties are carefully hand-picked at the same time with varying degrees of ripeness, processed together, pressed gently with a pneumatic wine press after 3 hours of maceration, and fermented in cooled steel tanks (75%) as well as in large, used oak barrels (25%). After nearly a year of aging on the fine lees, it was bottled. The result? A wine that impresses with its complexity, structure, and balance.
