Buckels Walnut – Snack Knife by Robert Herder

The Windmühlenmesser Buckels is a breakfast or snack knife from Robert Herder in Solingen with a walnut wood handle. Born from Germany's rural tradition, this knife and its unique blade shape have been manufactured at Windmühlenmesser for over 140 years using the "Solingen thin-grind" principle.

The Buckels blade, also known as the traditional German table knife, displays its independent character through its unmistakable shape, defined by its specific tasks: cutting and spreading. It is wide for good guidance, sharp so that no other knife is needed for hard sausage, and the round tip allows expensive items like butter to be spread thinly and economically. Its smooth thin-grind slices through bread and especially bread rolls without leaving unwanted clumps of crumbs in the middle. It does not require a serrated edge. The blade is made of stainless steel. Like all classic Windmühlenmesser, it features a beautiful wooden handle that rests comfortably in the hand. A sharp all-rounder for the kitchen and the table.

Robert Herder – stainless blade and walnut wood handle

The blade of the Buckels snack knife is made of a stainless chromium-molybdenum-vanadium steel. This Windmühlenmesser is still finely and thinly ground today using the Solingen thin-grind method and "blue-glazed" (blaugepließtet) by hand by true masters. A true rarity and one of the best blue-glazed knives from the Herder manufactory. You can sharpen this knife with a diamond honing steel or a whetstone.

The handle is handcrafted from walnut wood, finely sanded, shaped, polished, and oiled by master craftsmen. The wood for the walnut handle comes from pieces of the root or the trunk near the root. It is harvested in Baden or France. Walnut wood is hard and provides a good grip, with an elegant black-brown color and beautifully swirled grain. It is rare, refined, and very durable—a real gem among European woods.

The wood is only oiled and not chemically sealed, making it food-safe and open-pored. After the first contact with water, it becomes slightly rougher and thus more slip-resistant. The walnut handle is characterized by a warm feel, natural grip, and individual grain. Maintain the handle regularly with wood care oil, and it will give you many years of pleasure. The knife is not dishwasher safe.
