KB2 BrotBeidhänder – Bread Knife by Robert Herder

The Windmühlenmesser KB2 BrotBeidhänder is a large, high-quality bread knife from Robert Herder in Solingen. The BrotBeidhänder KB2 has a hand-polished double-sided serrated edge. Both right- and left-handed users can cut evenly with it. The knife stays true to its cutting line. The blade made of rust-free chrome-molybdenum-vanadium steel and the ergonomic plum wood handle make this bread knife something very special, which practically glides through the bread when cutting.

Robert Herder – Stainless Steel Blade and Plum Wood Handle

For the knives of the K-series, which are characterized by exceptional product properties, a special chrome-molybdenum-vanadium steel with a carbon content of 0.7%, combined with a chrome content of 14.5%, is used for the knife blades. This results in the desired rust resistance on the one hand, and an extraordinary hardness of 60 HRC (Rockwell hardness degrees) on the other, which ensures the blades retain their sharpness for a long time. Classically, the blade is blue-glazed.

The bread knife is equipped with a highly ground, hand-polished wide "8mm Langerschen Wave," one of the best serrated edges with enormous edge retention. Due to this wave, the individual teeth on the cutting edge are thinner than with conventional serrations. This makes them many times sharper, but also somewhat more delicate.

The handle of the KB2 bread knife is handcrafted from steamed plum wood, riveted to the knife tang, finely ground by master craftsmen, freely shaped, polished, and oiled. Plum wood is hard, gnarled, and often interspersed with branches. It has a very dense growth and great resilience. Its beautiful, nuanced grain ranges from light brown-pink to dark brown-violet. Plum wood has an exceptional character and high utility value. The wood is only oiled and not chemically sealed. This makes it food-safe and open-pored. After the first contact with water, it becomes slightly rougher and thus more slip-resistant. The plum wood handle is characterized by a warm feel, natural grip, and individual grain. Maintain the handle regularly with wood care oil, and it will give you pleasure for a long time. The knife is not suitable for dishwashers.
