Olive oil from Azienda Guerrieri is called ORO or VERDE – two extra virgin olive oils from the estate's groves on the Metauro. The trees stand between the vineyards and wheat fields, and the olives are cold-pressed quickly after harvest. Both are bottled in 500 ml bottles, one with gold lettering, the other with green.
The mild and the robust side of the Marche
The ORO, made from the Leccino variety, is the gentle oil for everyday use – fruity, rounded, and with a fine sharpness at the finish. It is harvested only between late October and mid-November. Raw over leaf salads, steamed vegetables, or light fish, it remains pleasantly in the background, allowing other ingredients to take the lead.
The VERDE, a blend of Frantoio and Raggiola, is harvested as early as the beginning of October while the olives are predominantly green. This results in a grassy, spicy oil with the subtle bitter note that characterizes fresh oils. It is at its best on bruschetta, minestrone, and everything off the grill, where a few final drops are all it takes. Together, the two cover the spectrum from mild to spicy – and the wheat from the same fields is what goes into the pasta from Azienda Guerrieri.
