For Italianavera's Passata di Pomodoro della Nonna, ripe date tomatoes from the Piana del Sele in the province of Salerno are cooked down and puréed within a few hours of harvesting. This fresh-from-the-harvest processing perfectly preserves the fruity aromas, lending expression, character, and a true tomato flavor to your dishes.

The Passata di Pomodori is characterized by its smooth yet flavorful consistency. The puréed tomatoes are excellent as a base for a pasta sauce or as a foundation for a tomato soup, as the ripe, deep-red tomatoes from Southern Italy give this passata an intense, authentic tomato taste. You can refine the Passata di Pomodoro to your liking, for example, with diced vegetables, garlic, capers, chili, basil, or rosemary.

In San Marzano Sul Sarno, not far from Naples, between the lightness of the Amalfi Coast to the west and the energetic volcano Vesuvius, is not only home to the very best tomatoes but also to arguably Italy's most attractive sauce maker: Diana Attianese. As a child, she learned everything there is to know about tomatoes from her mother and aunt, who in the summer cooked down freshly picked, ripe tomatoes into sugo in the early, cooler morning hours: how the different varieties taste, how they smell when ripe, which tomatoes are best suited for sauces, and which are peeled and cooked whole. Even if the old varieties are not suitable for transport due to their sensitivity, they can be wonderfully preserved in glass and can without losing their fresh taste and intense aroma.

Diana knew the canning business well, as her father was active in this industry, but as is often the case with daughters, they want to do things differently, better than their fathers. Only the best tomatoes are cooked into sugo or go into the brightly designed cans of the business graduate. And because the art of preserving is traditionally a women's craft, the name Italianavera suits the lively Italian woman and her ten female employees particularly well.
