Yellow Tomato Passata by Italianavera made from yellow tomatoes

Italianavera’s Passata di Pomodoro Giallo is a strained sauce made from yellow tomatoes from the Piana del Sele near Salerno. The elongated, pear-shaped variety has low acidity and plenty of natural sweetness, resulting in a milder sauce than the red variety.

The Passata di Pomodoro Giallo from Italianavera is made from yellow fruits from the Piana del Sele, which are cooked and passed through a sieve to create a thick, velvety sauce. Its vibrant color is preserved, as is its mild, almost sweet base note.

Mild, sweet, and well-rounded

The yellow passata tastes noticeably milder than its red siblings because this variety lacks the strong acidity that red fruits bring with them. What remains is a calm sweetness with a hint of fruit in the background.

You can heat it up on its own or enhance it with olive oil, garlic, and fresh basil. Ten minutes over a low flame is enough for the aroma to develop; a strained sauce doesn't need longer on the stove.

Because the acidity is subtle, it pairs well with more robust ingredients, such as anchovies, capers, or roasted fennel. A splash of lemon adds zest if you find the mildness a bit too soft.

On the plate, the first thing you notice is the color—a rich, sunny yellow that shines through even under pasta and herbs. If you want to surprise your guests, serve it alongside the red version.

When heated, the passata thickens quickly because it has already been passed through a sieve and contains very little water. A spoonful of pasta water helps if it is too thick when you take it off the stove.

Sugo for fish, pasta, and soup

The yellow version pairs better with fish than a strong red one because it doesn't overpower the delicate natural flavor. As the base for a velvety soup, you need little more than broth and a spoonful of cream.

It works effortlessly with simple pasta, olive oil, and grated Parmigiano Reggiano. Mixed with a red passata, it creates a two-tone effect on the plate without any extra effort.

It also proves itself as a base for risotto, stuffed peppers, or under baked fennel—anywhere where acidity might overwhelm the dish. Store leftovers in a sealed jar in the refrigerator and use within two to three days.

The red version is the Passata di Pomodoro della Nonna, while things get bolder with Italianavera's Corbarino. The rest of the range can be found under Pasta, Risotto and Sugo.

Yellow varieties from the Sele Plain

The variety grows in the Piana del Sele south of Salerno, where irrigation and sea breezes temper the summer heat. Under these conditions, they ripen evenly instead of splitting at the skin.

Yellow fruits are the older variety in Campania, as the first plants from America bore golden fruits. This is the origin of the Italian name "pomodoro," which literally means golden apple.

The addition of "giallo" in the name simply means yellow and indicates the color on the label. In stores, they are displayed next to the red ones, but they only make up a small portion of the selection.

This harvest is processed separately from the red to ensure the color remains pure and does not turn reddish. Italianavera bottles the passata immediately after straining, while it is still vibrant.
