Spunzillo canned tomatoes are tinned cherry tomatoes from Italianavera in Campania, named after the point that grows at the blossom end of the fruit. They are packed whole in their own juice, which allows a sauce to be made from the contents without needing any additional liquid.

Firm skin, soft core, thick juice

The skin of the Spunzillo is firmer than that of other cherry tomatoes and retains its bite even in a hot pot. Beneath it lies a pulp that gives way at the first touch, releasing the sweet juice that has surrounded the fruit since harvest. The small sphere measures barely more than a thumbnail, which is why it remains recognizable as a whole piece in the sauce.

Because the juice comes from the same harvest, the liquid tastes just as intense as the fruit itself. Anyone who opens the can and tries a spoonful will find sweetness, salt, and a slight bitterness from the skin side by side. For a sugo, all you need is oil, garlic, and fifteen minutes of patience.
