Both grape varieties, originally known from Bordeaux, have been cultivated since the winery's founding around 1900, due to Kurtatsch's southern location. The warm microclimate and well-drained soils promote the physiological ripening process of these noble varieties.

The proportion of Cabernet Sauvignon gives the KIRCHHÜGEL terroir wine its wonderful fruit of blackcurrants, elderberries, and blackberries, while the Cabernet Franc contributes spicy herbal aromas of pepper and mint. A fine nerve of acidity gives the muscular body tendons and impressive staying power in the bottle. The Journey of Kirchhügel Cabernet Riserva: From Harvest to Bottle

This South Tyrolean red wine is the result of careful harvesting and masterful winemaking. At Kellerei Kurtatsch, particular importance is placed on environmentally friendly winemaking that preserves the authentic taste of the terroir. The Cabernet vines for this red wine from the Terroir line stand on sandy or gravelly soils rich in dolomite on slopes or steep hillsides between 250-350m above sea level. The grapes from small parcel vineyards with throttled yields (60hl/ha) are hand-picked at the optimal ripeness and quickly brought in small crates to the newly built, impressive winery in Kurtatsch. There, they were destemmed according to the specifications of winemaker Erwin Carli and gently pressed after temperature-controlled mash fermentation in a rotary tank. The aging takes place first in French barriques for 12 months, followed by further aging in large oak barrels.
