The 25-30 year old vines for this Grauburgunder estate wine from Weingut Klumpp grow on two different soils: partly on a plateau with gypsum keuper soils with high clay content, and partly on very heavy clay marl soils. This results in long-lived wines with high density and complexity.
Winemaking – Klumpp
To harvest ripe grapes in autumn, optimal sun exposure is required, so Markus and Andreas Klumpp ensure early double-sided leaf removal in the grape zone. Later, yield reduction is achieved through cluster division. Selective hand harvesting of the grapes takes place in three passes. In the winery, grapes and must are not pumped but are transferred to the fermentation tanks by gravity. 75% of this white wine ferments in temperature-controlled stainless steel tanks. 25% ferments in 500l tonneaux with five months of lees aging, with bâtonnage (stirring of the lees) practiced for three months. This adds richness and creaminess to the Grauburgunder.
