Weinhaus Klumpp – Grauburgunder Tonmergel – Regional Wine [ORGANIC]
The Grauburgunder Tonmergel regional wine 2022 from Weingut Klumpp is characterized by ripe, red-cheeked apples, juicy plums, and a mineral-cool, stony core, complemented by pleasantly spicy notes from oak barrel aging. Fruit and stone, spice and racy play are wonderfully united in the Klumpp Grauburgunder Tonmergel!
The 30-year-old vines for the Grauburgunder Tonmergel from Weingut Klumpp grow on red clay marl with an extremely high clay content. The site forms a small basin that benefits from the cool winds from the neighboring forests. The clay marl is heavily layered and forces the vines to root deeply.
Winemaking – Klumpp Grauburgunder
To harvest ripe grapes in autumn, optimal sun exposure is required, so Markus and Andreas Klumpp ensure early double-sided defoliation of the grape zone. Later, yield reduction is achieved by grape splitting, so that 51hl/Ha could be harvested. Selective hand harvesting of the grapes takes place in three picking rounds in the early morning hours to preserve the fruit aromas.
In the winery, grapes and mash are not pumped but moved into the fermentation tanks by gravity. 40% of this white wine ferments in temperature-controlled stainless steel tanks. 60% ferments in 500l tonneaux with six months of lees aging, during which bâtonnage, or stirring of the lees, is practiced for two months. This brings fullness and creaminess to the profound, dense Grauburgunder, reflecting the grape variety and the clay marl soil.
