Colorful Heart Pasta as an Edible Greeting
Colorful heart-shaped pasta from Schaut are egg noodles in three colors: red from tomato, green from spinach, and natural from pure egg dough. Handmade in a small workshop on the edge of the Swabian Jura, intended as a little gift you can eat.
Colorful heart-shaped pasta are handmade egg noodles from the Schaut pasta workshop in Andelfingen, shaped into little hearts using bronze dies. Their colors don't come from a dye pot, but from tomato and spinach powder. In this way, 35 percent fresh egg and durum wheat semolina are turned into colorful hearts that smile up from every plate.
Color from tomato and spinach, not from a pot
The heart pasta glows in red, green, and golden yellow, and every color has its own reason. Even before cooking, you can see that no one has helped things along with food coloring.
Tomato powder is added to the red dough, spinach powder to the green, and the natural one comes from the egg alone. No artificial colors, just what nature provides. The bronze dies give the colorful heart-shaped pasta its fine, rough surface that holds sauce well.
There is 35 percent fresh egg in the dough, along with durum wheat semolina, as with all pasta from Schaut. After 10 to 12 minutes, the hearts are cooked and remain firm to the bite, al dente, and cheerfully colorful, without ever becoming mushy. Every single heart is extruded through the bronze die and then gently dried, without any rush.
A gift you can eat
Heart pasta is the edible token of appreciation for those who already have everything. For Valentine's Day, weddings, Mother's Day, or just because you’re thinking of someone. Whether you hand them to a loved one or bring a little color to your own plate, these hearts are always well-received.
On the plate, the colorful hearts don't need a heavy sauce—they are the eye-catcher themselves. A little melted butter, some Parmesan, or a light tomato sauce is perfectly sufficient. Kids love the hearts plain with butter, without any greens on them. Put them into boiling water just before serving so they retain their shape and color.
Those looking to give a gift often grab several varieties at once. Alongside the hearts, there are colorful lucky noodles in the shape of clover leaves, an equally lovely greeting. A 300-gram pack is enough for two to three servings; a pretty trio is created by combining the hearts with the clover leaves and the stars from the same producer.
Made with heart in Andelfingen
In the small pasta workshop, Brigitte Schaut pushes the dough through bronze dies—natural, red, and green—until lots of little hearts are created. The family has been making pasta here since 1993; it all started back then with eggs from their own farm and a converted garage.
The small beginning grew into a workshop with transparent production, where they still work today in the third generation. The dough dries slowly, depending on the weather, following the motto "Time for the Special." The family makes over twenty types of pasta this way, from simple to playful. In 2013, an extension with its own sauce kitchen was added; since then, the pasta sauces have been created there as well.
The eggs come from the nearby Untermarchtal monastery, the durum wheat semolina from France because it makes the pasta firmer. In addition to the heart pasta, you can find more pasta specialties from Schaut and other fresh pasta with us. Pasta that comes from the heart.
