Metzgerei Steiner's Tyrolean cheese dumplings are handmade dumplings made from white bread, savory cheese, egg, and sautéed onions, shaped according to a traditional family recipe. Four pre-cooked dumplings that you let steep in hot water for a good 15 minutes—cheesy, hearty, and beautifully light.

Tyrolean cheese dumplings are the cheesy sibling of the bacon dumpling, a South Tyrolean classic found in every good inn, here handmade by Metzgerei Steiner. The spherical dumplings contain 36 percent white bread, 22 percent savory cheese, milk, egg, sautéed onions, and parsley. You will receive four pieces, weighing a total of 300 grams, pre-cooked and vacuum-sealed, ready to be served warm in just a few minutes.

Cheesy, hearty, with roasted onions

When sliced open, the cheese dumplings emit a savory aroma of melted cheese and sautéed onions; the crumb is light and pulls away in slight strings when cut, a sight that immediately whets the appetite and reveals the quality of the cheese inside.

The taste is savory, hearty, and creamy, milder than the bacon dumpling, but with the full depth of the cheese. The white bread makes the dumplings light, while the roasted onions add a subtle sweetness. Cheesy, savory, and comforting—this is the taste of South Tyrolean mountain hut cuisine, perfect for warming you from the inside out on chilly days. A dumpling that makes you feel as though you're dining with a view of the mountains.

In broth or with brown butter

Let the cheese dumplings steep in hot, not boiling, water for 15 to 20 minutes; they will be ready to serve and keep their shape perfectly. They do not like to be boiled too vigorously; a gentle simmer is best.

They are classically served with melted brown butter and a little chives, or in a clear broth as a soup accompaniment. A ladle of South Tyrolean sauerkraut adds the fresh, acidic note that pairs so well with the cheese. Pan-fried in slices until the cheese becomes crispy at the edges, they make a complete meal when served with a green salad.

The cheese dumplings are made by hand at Metzgerei Steiner in Rasen-Antholz, currently run by Florian Steiner, in the heart of South Tyrol’s Puster Valley, surrounded by mountain meadows and forests.

High-quality cheese, fresh white bread, and roasted onions are combined here using a recipe the family has cherished for generations. Simple ingredients are transformed into a specialty that people in South Tyrol love to stop for. Craftsmanship, tradition, and time make the difference you can taste in the very first bite—this is no factory-made convenience product, but dumplings just like Grandma used to roll.

The cheese dumplings are a fresh product and are shipped chilled; they have a shelf life of at least 7 days from the date of shipment. Once opened, enjoy them within two days, or freeze them and bring the mountains home whenever you feel like it.

Die Metzgerei Steiner aus Rasen-Antholz im Südtiroler Pustertal fertigt seit drei Generationen originale Spezialitäten: mild geräucherten Bauernspeck, luftgetrocknete Wurzen, Salami und handgemachte Knödel. Die Schweine kommen von kleinen Höfen der Umgebung, das Wild aus den Wäldern ringsum, alles wird im eigenen Haus verarbeitet und in Ruhe an der Bergluft gereift. Heute führt Florian Steiner den Familienbetrieb. Südtiroler Handwerk für eine zünftige Brotzeit.
