Weingut Wittmann – how wine is made
The Riesling grapes grow on the gentle hills around the Wittmann estate in Westhofen in Rheinhessen. The vineyards are farmed biodynamically, which means eschewing chemical-synthetic agents and activating soil life, combined with mindfulness during daily walks through the vine rows. "Every contact is a dialogue," is how Philipp Wittmann sums it up. This means intensive vineyard care throughout the year, low yields, and meticulous manual selection of the grapes, which form the foundation for the high quality of the wine.
After being harvested by hand, the grapes are gently pressed and the must is guided into the cellar using gravity alone, avoiding any pumping. There, it has time to ferment spontaneously in traditional wooden barrels and remains on the fine lees for a long time, which gives the wine its structure. In the end, there is a lot of tasting and blending, as each wooden barrel contains the must from only a few rows of vines, until the perfect balance is found. Winemaking is a matter of the head, with heart.
