His manufactory therefore offers five carefully selected salts: two pure sea salts from Portugal, one crunchy finger salt, and two seasoned salts in which salt and spices are artfully combined.
Sea salt from Portugal, pure and honest
The Flor de Sal is the flower of salt from the Atlantic: delicate crystals harvested from the water's surface only when the sun is shining and the sea is calm – the finishing salt for steak, tomatoes, and chocolate desserts. Its rustic brother, the coarse sea salt in a 1-kilo bag, is the workhorse for pasta water, salt crusts, and the mill.
In between lies the Jozo gourmet salt – a crunchy finger salt that seasons finished dishes right at the table. Three salts, three tasks, one origin: the sea.
Seasoned salts with character
The two seasoned salts show what happens when a star chef composes salt. The Poivres Rares seasoned salt combines Mediterranean sea salt with noble, rare peppercorns – for steaks, baked potatoes, and anything that can handle salt and pepper in one go.
The tomato seasoning salt, in turn, blends fruity tomato into the sea salt – "Paradeiser" is the Austrian word for tomato, and that is exactly how sunny it tastes. On mozzarella, scrambled eggs, or simply on buttered bread, it is the fastest way to taste summer.
Which salt for what
The rule of thumb is simple: coarse salt is for cooking, fine salt is for seasoning, and Flor de Sal is for the final touch – because the later the salt is added to the dish, the more clearly you taste its texture. Seasoned salts save you from having to grab three jars at once.
