Poivres Rares seasoned salt is a seasoned salt from Altes Gewürzamt in Klingenberg am Main, packaged in a tin containing 160 grams. Mediterranean sea salt heads the list of ingredients, accompanied by coarsely crushed black pepper, long pepper, and cubeb pepper.

Salty, peppery, complex

Poivres Rares has a spicy and complex aroma, as three rare varieties combine with Mediterranean sea salt.

On a hot baked potato, the bold spice of the black peppercorn, the sweet warmth of the long pepper, and the fruity, tart notes of the cubeb merge with the minerality of the salt. Salty, peppery, complex: you get a mill and a shaker in one single tin.

Sea salt is listed first in the ingredients, and that is not just a formality. This blend is a salt with pepper, which is why you should dose it like a shaker and not like a spice mill. It is harvested in shallow basins where seawater evaporates under the sun and wind until the crystals remain.

On steak and baked potatoes

This seasoning is certainly convenient, as it works wonders on steaks, baked potatoes, tomatoes, and anything else that calls for both salt and pepper.

Generously sprinkled over a seared steak, it eliminates the need for two separate mills, and it is just as perfect on halved tomatoes with olive oil. When added to the dish at the end, the aromas of the peppercorns remain fresh.

Salt can do more than just taste salty. It dissolves in the juices of the meat and carries essential oils to places where a dry spice alone could never reach. This is why a crushed seasoned salt affects meat differently than two separate mills, even though it contains nothing else.

Because the blend contains salt, you should season in small steps and taste in between before adding more. However, it is not suitable for brines, bread dough, or curing, as those require coarse sea salt measured precisely by the gram.

The reason for this lies in the history of trade. In the Middle Ages, cubeb and long pepper were found in every well-stocked European kitchen, only to disappear when maritime trade brought in common goods in bulk. Both season dishes with more warmth and herbal character than what is found in most mills today; the cubeb pepper shows exactly how one of them tastes on its own.
