Briosa Gourmet's small sardines in olive oil are "Petingas" – especially tender, young sardines from the Portuguese Atlantic coast, hand-packed in olive oil and lightly salted. Not a rough fish from a mass-produced tin, but a fine delicacy for bread, salad, and tapas.

The small sardines in olive oil from Briosa Gourmet are so-called Petingas, particularly small and fine sardines from Portugal. Carefully selected by hand, nestled in the best olive oil, and only lightly salted, they remain aromatic in flavor and firm in texture. Let yourself be surprised by the little sister of the classic sardine in oil – it tastes great whole, on bread, or in a salad.

Firm in texture, fine in olive oil

Petingas are miniature sardines with a firm texture and a mild, salty-fresh taste of the sea, softly enveloped by the fine olive oil.

Because these small fish are so tender, you eat them whole, skin and all. A sip of the good oil from the tin, a few drops of lemon juice, some coarse pepper – and the Petingas show why the Portuguese love their sardines so much. Salty, succulent, uncomplicated. That is the taste of Portugal.

Where their larger siblings are bold and striking, these little ones remain subtle and delicate. A sardine for those who like things a touch more elegant and prefer their fish as a tender morsel rather than a hearty meal. These mild bites are also perfect for the breakfast table, completely devoid of any strong fishy aftertaste.

Simply on fresh white bread

The small Petingas show off their best side quite simply: on a slice of fresh white bread, as tapas, or in a summer salad.

They are a perfect accompaniment to an aperitif with a glass of Vinho Verde, along with a few olives and ripe tomatoes. They look just as good on toasted bread next to a sardine pâté for spreading as they do served over a potato salad or with linguine, garlic, and a little chili.

Hand-packed in Figueira da Foz

Briosa Gourmet is a brand by A Briosa, founded in 1991 by António Faustino in the fishing port of Figueira da Foz on the Portuguese Atlantic coast.

The location was chosen with care, as the fish arrives fresh and without long transit times directly at the port of Cabedelo. Diligent hands clean the small sardines and place them into the tins with nimble movements before they are topped with olive oil and gently preserved by steam. Up to 60,000 tins are produced in a single day this way.

The lovely paper with its Portuguese Azulejo tile patterns is wrapped around each tin by hand, a small work of art in itself. Seagulls, boats, and the salt in the air are all part of it, and a little bit of that is in every tin. This care can be tasted as far away as England, France, and the USA.

In addition to the Petingas, the cannery also packs tuna, mackerel, and fine fish pâtés into its golden tins. Briosa has been coming to us for many years via the house of Conservas Portugal Norte, founded in 1912 in Matosinhos, which has cultivated Portuguese tinned fish for generations.
