The fish arrives fresh directly at the harbor of Cabedelo, with no long distances to travel. Diligent hands clean and fillet the tuna and place it with chickpeas in aromatic olive oil before the tin is gently preserved using steam. Up to 60,000 tins are produced this way in a single day, each wrapped by hand in paper with an azulejo pattern. Sardines, mackerel, and tuna arrive fresh daily, each variety following its own recipe.
