Peach Fine Pairing by Easton Reed places peach alongside thyme. Over half of the jar is fruit, maple syrup provides a caramel base note, and the herb keeps the sweetness in check without overpowering it.

Peach Fine Pairing is a peach chutney by Easton Reed from Augsburg, packed in a 230-gram jar. Peaches are the primary ingredient at 51 percent, followed by sugar and maple syrup. Thyme and lemon concentrate serve as counterparts, and pectin gives the jar its consistency.

Soft peach with thyme on top

The chutney glows in a bright golden-orange and is significantly softer than its tart sibling jar with cranberry. The spoon leaves a trail that slowly closes back up, with pieces of fruit remaining visible.

At the forefront is the peach, juicy and round, with the soft pieces of a ripe fruit that can still be identified individually on bread. The maple syrup pushes a caramel tone underneath, which makes the fruit warmer than sugar alone could, and gives it a slight toasted note.

Only then does the thyme make itself known, resinous and a little tart, and it is precisely this that prevents the whole thing from veering toward jam. Without it, this would be a peach spread rather than a companion for savory dishes. Fruity, caramel, herbal—it unfolds in this order, with the lemon concentrate maintaining the acidity.

With goat cheese, ham, and grilled food

Peach and savory flavors are an old pair, and this jar is made exactly for that. On a plate with air-dried ham or raw bacon, it replaces the melon wedge, only with significantly more spice and without the watery undertone.

Alongside fresh goat cheese, brie, and young sheep's milk cheese, it plays its sweetness against the salt, and on grilled chicken or pork tenderloin, a spoonful turns into a sauce. It also finds its place with roasted duck breast and a piece of aged hard cheese, and on a crostini with cream cheese, an appetizer needs no more than this one spoonful.

Thyme is the herbal partner of stone fruit

The fact that an herb from Mediterranean cuisine is paired with peach seems unusual at first, yet it has a coherent logic.

Thyme brings resinous, slightly camphor-like notes, which in small quantities are also found in the skin and pits of stone fruit. Fruit and herb therefore interlock instead of running parallel to each other, and in Southern France and Italy, apricots and peaches have long been cooked with thyme or rosemary.

In this recipe, the herb remains at the very end of the ingredient list and acts more as a primer than a distinct flavor. Those looking for it will find it immediately; those who aren't paying attention will simply taste an especially well-rounded peach.
