Green Chocolate Easter Bunny by Fesey Chocolate Figures

The green chocolate Easter bunny by Fesey Chocolate Figures comes wrapped in grass-green foil and weighs 150 grams. Its ears lie flat against its back, its hump is rounded, and a prominent little belly arches out from beneath a pale mint satin ribbon.

Green Chocolate Easter Bunny is the large sitting-rabbit mold among the chocolate figures from Fesey in Riemerling near Munich. At 150 grams, it is the heaviest of all the bunnies, which is why it gets its own place on the table rather than being tucked into a basket.

Those who have multiple baskets to fill should reach for the 90-gram green Easter bunny, which fits comfortably between eggs and Easter grass. The large mold, however, is best displayed standing freely so that the ribbon does not disappear into the grass. Among Fesey's chocolate figures, it is the heaviest piece to grace the table at Easter.

Grass-green like the first meadow in April

The shade is a bright, rich meadow green that almost seems to glow in the light and has nothing in common with pine green. Each fold in the foil catches the light differently, making the figure appear lighter or deeper depending on the angle. Placed next to daffodils on a windowsill, the grass-green is hardly noticeable, but against white porcelain, it stands out immediately.

The foil remains unprinted across the entire figure, and every feature of the bunny originates either from the embossing of the mold or from the hands that applied the paper. A thin gold cord runs around its neck, topped with satin in a pale mint—two shades lighter than the "dress" underneath.

Twelve meters of cooling tunnel for a hollow wall

The filled mold rotates until the liquid mass is evenly distributed along the walls. It then travels through a twelve-meter-long cooling tunnel, which slowly and uniformly cools the figure down.

This specific process determines the shine of the surface and ensures that the bunny can later be lifted from the mold without breaking. Chocolate cooled too quickly develops matte streaks, while chocolate cooled too slowly sticks to the mold. The foil is applied only at the very end, and a person wraps it around the figure by hand.

Milk chocolate with a mild melt under green paper

In the list of ingredients, cocoa butter ranks ahead of cocoa mass, and the milk chocolate—with a cocoa content of at least 37 percent—owes it exactly what a hollow figure needs. Even at room temperature, the wall can be pressed in with a thumb; a splintering crack across the back does not occur.

Milky and gently sweet, the chocolate coats the tongue and finishes without a bitter edge. During coffee on Easter Sunday, a broken-off ear finds its way to the saucer as if by itself, and the bunny fits just as well into a second breakfast on the holiday. It prefers to be kept cool and dark; a cupboard shelf away from the window is perfectly sufficient.

Because someone has worked on every piece by hand, the paper never looks the same twice, which is why they speak of a house full of unique items.
