2 Medaglie d'Oro, known as Il Classico, is Giuseppe Giusti’s versatile Aceto Balsamico di Modena PGI from Modena, two gold medals strong. It strikes a balance between sweetness and acidity, bringing notes of ripe fruit, liquorice, and black pepper. The vinegar to choose if you are only allowed one in the cupboard.

With a density of 1.25, it is noticeably rounder than the silver medal, without descending into the syrupy depth of the higher gold grades. This keeps it versatile—sometimes as a seasoning over a dish, sometimes as a fine touch in a sauce. A true classic, indeed.

Ripe fruit, liquorice, a hint of pepper

The 2 Medaglie d'Oro has the aroma of ripe dark fruits, followed by a warm sweetness with clear acidity and a spicy finish of liquorice.

It is precisely this balance that makes it so useful; it is sweet enough for strawberries and tangy enough for meat. Fruity, spicy, and velvety, it all works together beautifully. It is the liquorice note that sets it apart from everyday balsamic and gives it depth. For those who prefer it thicker and sweeter, opt for the velvety 3 Medaglie d'Oro, the Il Denso.

Fine with carpaccio, fish, and eggs

The 2 Medaglie d'Oro loves fine cuisine: carpaccio, eggs, fish, seafood, white meat, and grilled vegetables.

It belongs over thin beef carpaccio with Parmesan and a drizzle of good olive oil, where its spice elevates the raw meat. Over poached eggs or fried fish, it adds a warm, slightly peppery final touch. It also pairs well with ripe strawberries, where its sweeter side shines through.

In the kitchen, it is best used raw or added towards the end of cooking, as prolonged heat will diminish its delicate aromas. For those who prefer something lighter, keep the fresh 1 Medaglia d'Argento on hand, which offers more acidity and less sweetness.

French oak and a royal supplier since 1929

The 2 Medaglie d'Oro is aged in French oak barrels, in use since 1900, and filled using the Solera principle from the acetaia’s casks.

Only cooked grape must and aged wine vinegar go into the bottle; the rest is patience. The Acetaia Giuseppe Giusti dates back to the 16th century and has been passing down its knowledge for over 400 years. As early as 1863, the vinegar merchant from Modena defined his golden ingredients: good grapes, good barrels, and time, according to Giuseppe Giusti.

The esteem in which the house was held is shown by the year 1929, when Giusti was appointed a supplier to the Royal House of Savoy. As an Aceto Balsamico di Modena PGI, Il Classico now sits in the middle of the Collezione Storica, in the historic "Champagnotta" bottle, and reaches you in a 250 ml format.
