Questions about White Condiment from Modena?

We are happy to help you with Giuseppe Giusti Modena.

White Balsamic – the light one from Modena for fish and Hollandaise

The Condimento Bianco di Modena from Giuseppe Giusti is a light, white balsamic made from Trebbiano grapes. Mild and fruity with low acidity, it is made for dishes that need to retain their bright color, rather than a dark aceto that stains everything brown.

Condimento Bianco di Modena, also known as La Delizia, is a refined white balsamic by Giuseppe Giusti from Modena. Matured from the sweet must of white Trebbiano grapes and straw-colored wine vinegar, it reveals notes of ripe yellow fruits and candied citrus. The light drop for anything that shouldn’t be darkened.

Unlike the dark Medaglie series, the Condimento Bianco remains light in the glass and on the plate. With a density of 1.19, it is light and fluid, the acidity is low, and the character is fruity rather than tart. A white balsamic for light summer cuisine that complements rather than dominates.

Fruity, floral, citrusy

The Condimento Bianco has the aroma of ripe yellow fruits and candied lemon; it remains mild, fruity, and pleasantly soft, without a sharp edge.

Its low acidity makes it so pleasant; it never pushes itself to the fore, but instead highlights the bright aspects of a dish. Aging in French oak and ash barrels gives it a gentle depth and its golden color. Where a dark balsamic clouds sauces and salads, the Condimento Bianco remains pleasantly clear—that is its true trick. Those looking for the dark counterpart should reach for the classic 2 Medaglie d'Oro, which brings more sweetness and spice.

Exquisite with fish, asparagus, and salad

The Condimento Bianco loves light cuisine: green and mixed salads, tender vegetables, fish, light sauces, and fruit salad.

Steamed asparagus and fried fish receive a fresh, unobtrusive accompaniment from its citrus notes. In a Hollandaise or Béarnaise sauce, it is indispensable to us because it provides acidity without dulling the light color. A few drops with good olive oil turn a simple green salad into a small feast.

Over ripe strawberries or a peach salad, it reveals its sweet side, as it also pairs wonderfully with fruit; a light splash is enough for a taste of summer in a glass. Unlike dark balsamic, it can be poured generously—here, freshness counts more than restraint. For a bold, dark note on the side, the dense 3 Medaglie d'Oro is ready.

Trebbiano grapes from the oldest Acetaia

The Condimento Bianco is created from the must of white Trebbiano grapes and straw-colored wine vinegar, matured in barrels of French oak and ash.

The Acetaia Giuseppe Giusti dates back to the 16th century, passing down its knowledge for over 400 years. As early as 1863, the vinegar merchant from Modena established the golden basic ingredients: good grapes, good barrels, and time, according to Giuseppe Giusti. In 1929, the house was appointed as an official supplier to the House of Savoy.

This means even a white balsamic like this receives the same care as the house's famous dark vinegars. The fact that Giusti crafts its light specialty with the same standards as the Medaglie series is evident in every fruity note. It comes to you in a 250 ml bottle; you can find more vinegars in our Balsamic selection. Bright, mild, and versatile—that’s summer on the plate and in the glass.
