3 Medaglie d'Oro, known as Il Denso, is the dense and sweet Aceto Balsamico di Modena IGP from Giuseppe Giusti in Modena, three gold medals strong. Produced from late-harvested, sun-dried grapes, it displays stewed plum and red fruit with a hint of honey and vanilla. The balsamic for the final touch on the plate.

With a density of 1.32, it pours from the spoon like syrup and stays on the food instead of running off. A few drops are enough, because what counts here is not the quantity, but the concentration. It’s no wonder so many declare it their favorite.

Stewed plum, honey, a touch of vanilla

The 3 Medaglie d'Oro smells of plum compote and red fruits; on the palate, a deep sweetness follows with warm acidity and a long, woody, spicy finish.

Velvety, dense, and syrupy, it coats food with a dark sheen. The sweetness is present, but it never becomes cloying because the acidity balances it out. Those who prefer something even deeper and more concentrated should step up to the even denser 4 Medaglie d'Oro.

Drizzle over Parmesan and strawberries

The 3 Medaglie d'Oro likes to take the stage at the end, over fresh or stuffed pasta, grilled meat, soft cheese, fruit salad, and dessert.

Drizzled over a chunk of aged Parmesan, its sweetness captures the saltiness particularly beautifully. Over ripe strawberries or a scoop of vanilla ice cream, it becomes a quick dessert, and it provides a glistening finish on a risotto. With a drizzle of good olive oil on the side, you already have half of Italian cuisine.

It is only important that it is used raw and added to the dish at the very end, as its delicate aromas do not handle heat for long. Those looking for a balanced all-rounder for everyday use should keep the versatile 2 Medaglie d'Oro on hand.

2009 Test winner from the oldest Acetaia

The 3 Medaglie d'Oro matures in French oak barrels, in use since 1900, filled according to the Solera principle from the house's own batteries.

The Acetaia Giuseppe Giusti dates back to the 16th century and has been passing down its knowledge for over 400 years. As early as 1863, the vinegar merchant from Modena defined the golden key ingredients: good grapes, good barrels, and time, according to Giuseppe Giusti. In 1929, the house was even named an official supplier to the Royal House of Savoy.

In 2009, the magazine Der Feinschmecker named Il Denso the test winner, an accolade that confirms its reputation as the secret star of the range. Exactly this blend of dense sweetness and award-winning origin makes it the most popular of the five vinegars. As an Aceto Balsamico di Modena IGP, it is bottled in the historic "Champagnotta" bottle and comes to you in a 250 ml format.
