A Modern Idea from the Oldest Acetaia

The Agrodolce with Fig combines fine wine vinegar with concentrated fruit sweetness—a new composition from one of Italy's most traditional Acetaias.

Acetaia Giuseppe Giusti was founded in Modena in 1605 and is considered Italy’s oldest vinegar manufacturer, in family hands for over 400 years and now in its 17th generation. As early as 1863, the vinegar merchant from Modena defined the golden basic ingredients: good grapes, good barrels, and time, according to Giuseppe Giusti. In 1929, the house was appointed purveyor to the Royal House of Savoy.

The fact that a 400-year-old manufactory produces fresh Agrodolce dressings today shows how tradition and new ideas go together. The fig vinegar is the light, fruity side of a house otherwise known for dark, dense vinegars.
