Raspberry Fruit Balsamic by Lang Weinessig from the Southern Palatinate

Raspberry Fruit Balsamic by Lang Weinessig is a vinegar preparation in which raspberry pulp accounts for more than half the content, with the wine vinegar playing a smaller role. It comes out of the bottle thick like a fruit purée, sweet, with the tart core of the berry underneath.

Raspberry Fruit Balsamic is the raspberry vinegar preparation by Lang Weinessig from the Southern Palatinate, available in a 250-milliliter bottle. In this context, "vinegar preparation" means that there is more fruit in the bottle than vinegar: the raspberry pulp sets the tone, while the wine vinegar keeps it lively.

Rich raspberry, with the tart core of the berry

It smells of freshly picked raspberries and tastes exactly like that—sweet and full, with that tart note that only this fruit possesses. Because it contains so much pulp, the balsamic is dense and velvety, almost a purée that keeps the acidity fresh and vibrant. It clings to a light leaf rather than running into the bowl.

A splash is enough, and the plate smells like July. The sweetness comes from the fruit itself, with a little added sugar, and the concentrated juice provides a sharp finish so that the raspberry is not lost in the acidity. It is precisely this dual approach—pulp and juice—that makes the difference compared to a merely flavored bottle.

Fruit vinegar for salad, cheese, and summer drinks

This fruit vinegar is right at home over field greens with goat cheese, as well as alongside fish, scampi, or roasted duck breast, where the berry stands up to the fat. In yogurt, over vanilla ice cream, or over fresh strawberries, it shows its sweet side without needing any further ingredients. A ripe soft cheese also benefits from a spoonful. Even those who usually reach for lemon will find this a brighter way to dress a salad with goat cheese.

It makes its greatest entrance in a glass: a dash in cold mineral water, secco, or prosecco, and your aperitif is ready. Those who prefer something exotic can reach for the Mango Fruit Balsamic, while those who prefer something dark and spicy should choose the Balsamico Südpfalz. In summer, the bottle will surely travel back and forth between the salad bowl and the carafe.

The pulp provides density, the juice provides brightness

Pulp is the entire fruit flesh including its turbidity, whereas juice is only the clarified portion. At Lang Weinessig, pulp is therefore the first ingredient, because it brings body, color, and aroma, allowing the balsamic to flow off the spoon like a sauce. The color also reveals the difference, as clarified juice would be significantly paler in this instance.

The wine vinegar base is derived from Palatinate wine and provides a mild, soft acidity that gives the berry room to shine. This keeps the fruit balsamic true to the fruit while still acting as a seasoning that brings a salad bowl together. A sharp spirit vinegar would simply overwhelm the delicate berry fruit.

A dash in water, in secco, over ice cream

Keep the bottle in a cool place and shake it before use so that the fruit and vinegar combine again. In summer, it is worth keeping a small supply on hand, because the berry looks just as good on ice cream, in punch, and over fruit salad. For a dressing, whisk one spoonful with mild oil until smooth. It works just as well over feta cheese with walnuts in winter as it does in summer. The entire collection can be found in the Lang Weinessig assortment.
