Vinaigrette Liese by Lang Weinessig in the large bottle

Vinaigrette Liese by Lang Weinessig is the bright organic salad dressing from the Southern Palatinate, presented here in a 500 ml bottle for households that reach for it often. White wine vinegar from oak barrels and Riesling wine set the tone, while sea salt provides the edge.

Vinaigrette Liese is a ready-seasoned vinegar preparation from Lang Weinessig in the Southern Palatinate, where white wine vinegar aged in oak barrels meets Riesling wine. The 500 ml bottle is the pantry size: one spoonful is enough for the bowl; you decide on the oil to add.

Mild acidity and the richness of grape must

Liese tastes bright and lean, the acidity remains delicate, and underneath lies the mild richness of the grape must, which rounds off the edges and gives the whole thing structure.

The wood has mellowed the sharpness of the seasoning over the aging period, which is why it remains soft on the leaves and allows even delicate varieties to retain their own flavor. The Riesling contributes its fruitiness without turning it into a sweet dressing.

Because the fat is only added at the table, the seasoning stands on its own, and you can still taste the vinegar, must, and salt individually. The aroma is reminiscent of wine and freshly sawn wood, without either becoming overpowering.

Salad dressing for the leaf bowl and the fish plate

In the bowl, Liese pairs perfectly with everything delicate: lamb's lettuce, iceberg lettuce, endive, thinly sliced fennel, or a handful of young herbs. Lukewarm potatoes and young beans also absorb the seasoning well while they are still steaming.

Over steamed asparagus or next to a light fish fillet, a spoonful replaces the entire sauce, and the lemon can stay in the fridge. For a marinade, stir in some oil and let zucchini or bell peppers soak in it for half an hour.

With fried goat cheese, over a lentil salad, or on warm roasted vegetables, this same spoonful adds the bright touch that robust dishes often need at the end. Potato salad handles the seasoning just as well as a plate of sautéed vegetables.

Riesling, grape must, and a long barrel aging

Riesling is the leading grape variety in the Palatinate and naturally brings a lot of acidity, which gives a vinegar its structure and keeps it upright. Over time in the barrel, this sharpness turns into a soft, grounding bass note.

Grape must is the juice of the berry before it becomes wine; it adds sweetness and some body, binding the seasoning enough so that it clings to the leaves. Sea salt and a little sugar provide the finishing touch, and Lang Weinessig works throughout with certified organic quality.

The foundation consists of organically produced wines, and the control number on the label makes this path from the vineyard to the bowl verifiable.

The large bottle in everyday kitchen life

Stored in a cool, dark place, it stays in perfect condition; a quick shake before each use redistributes the must evenly. Those who put a bowl of salad on the table every day should reach for the 500 ml bottle and won't have to worry about running out. If you prefer it milder, add more oil; if you are looking for more acidity, add less—the large bottle makes both possible without any calculations.

If you would like to get to know it first, choose the small 180 ml Liese; if you prefer it darker and fruitier, choose the Albert with Dornfelder. Other bottles from the producer can be found at Lang Weinessig.
