For Primopasta grilled peppers, Antonio Viani selects ripe and fully ripe, yellow and red, bell peppers. They are first grilled, then hand-peeled, marinated with a little salt and wine vinegar, before being preserved in sunflower oil. This process intensifies their fruity-sweet flavor. A preserved product can hardly taste fresher. The pickled pepper fillets, with their meaty texture, are not only a spicy counterpoint on an antipasti platter, but also taste delicious with cold cuts, in a frittata, with cooked meat or fish, for preparing vegetable stuffings, or with bagna cauda, the warm Piedmontese anchovy sauce.
