The Rings Kallstadt Spätburgunder 2022 – red wine from Rings Winery grown on limestone – is a bone-dry VDP.ORTSWEIN from the best, selected Kallstadt vineyards, planted with young vines. The Pinot Noir grapes grow in cool locations with limestone and calcareous marl, which are cultivated by the Rings brothers Andreas and Steffen from pruning to harvest. With village wines, the focus is on the typicality of the wine village, not that of the grape variety or a specific site.

Rings Winery produces two Pinot Noir village wines: the Freinsheim and the Kallstadt, one from quartz sand and one from limestone. The two wines are like two brothers from the same parents, raised with the same values, equally protected, equally encouraged, yet with a very distinct character, both wonderful. Thus, the Spätburgunder from limestone is the more elegant, leaner type. It displays bright, red berry notes, like those of small, wild-grown wild strawberries, with a hint of forest floor, followed by a smoky note from the oak, cool, salty minerality, delicate and powerful at the same time.

Rings – Winemaking

The Rings brothers place great importance on healthy soils, as only from them can healthy vines stand and healthy grapes grow. They begin early with sowing buckwheat, clover, and radish, which prevents soil erosion, attracts beneficial insects, and retains moisture in the soil, which is revitalized with the application of horse manure as a natural fertilizer. Canopy management is also important for the quality of the wine: double shoots are manually removed, and depending on the weather, the grapes are defoliated and thinned to aerate them. The grapes are hand-picked at the optimal harvest time, sorted and selected again at the winery, and destemmed. 3,800 L/Ha are harvested. Without pumping, the Pinot Noir grapes enter their fermentation tanks. In warm years, a small portion is not destemmed. After a short maceration period, natural yeasts are allowed to work and initiate spontaneous fermentation. Aging takes place 30% in new barriques and 70% in used ones, each for 18 months.
