The Fleur de Sel Isla Blanca from Sal de Ibiza is a limited edition in a white ceramic jar – a tribute to the "white island," as Ibiza is affectionately known. Hand-harvested salt blossoms from the salt pans meet lemon peel, chamomile flowers, and the essential oils of Ibizan herbs: a herbal salt that smells of summer, macchia, and sea breeze.
Ibiza is called Eivissa in Catalan, but its oldest epithet is Isla Blanca – the white island, named for its lime-washed houses, light, and salt. It is therefore no coincidence that the brightest edition of the brand bears this name; it is a small love letter to its home.
Eleven herbs and blossoms, one island scent
The recipe reads like a walk across the island: anise, fennel, chamomile, lavender, lemon, orange, and peppermint meet rosemary, sage, thyme, and juniper – 11 aromatic voices captured in essential oils and married with the mild salt blossoms from the Parque Natural de Ses Salines.
The result is astonishingly balanced: first the citrus freshness, then the warm herbs, and finally the delicate floral note of the chamomile. No single aroma takes precedence – just like a good summer evening, everything remains perfectly in balance.
For fish, chicken, and buttered bread
Isla Blanca is made for Mediterranean summer cuisine: over grilled fish and chicken, on tomatoes, zucchini, eggplant, bell peppers, and red onions from the grill – everywhere that lemon and herbs belong anyway. Sprinkle the crystals onto the plate just before serving so the fragrance remains vibrant.
The most beautiful surprise, however, is the simplest: pure on a good piece of buttered bread. Nothing more is needed to understand why this edition was re-released after its 2019 premiere – demand dictated it. The porcelain spoon in the jar helps with portioning, and the white vessel graces any table.
A tip for storage: the essential oils of the herbs are volatile companions – the cork lid keeps them in the jar, so it is best to keep it away from direct sunlight and kitchen steam. This way, even the very last pinch will still smell of macchia, citrus, and summer.
An edition for the beauty of the island
Like all limited editions from Sal de Ibiza, the Isla Blanca combines indulgence with commitment: for every ceramic jar sold, the brand donates 1 euro to the Ibiza Preservation Fund, which supports local projects to preserve the natural beauty of the Balearic Islands. The series of editions once began with a pink jar for Pink Ribbon, followed by the blue Mar Blau for Plastic Free Ibiza.
