The Sal de Ibiza Fleur de Sel Mar Blau, salt in a blue ceramic pot, has a special ingredient: black, fermented garlic. For every pot of this limited edition sold, €1 goes to the organization Plastic Free Ibiza, which is dedicated to freeing Ibiza from plastic waste.
The Black Garlic Wonder, black, fermented garlic, is one of the most magnificent achievements from the molecular cuisine of Michelin-starred chef Ferran Adria and has become indispensable in Spanish gourmet cuisine. While this special garlic still has to earn its laurels in the rest of Europe, it has long been popular in Asia. To turn classic garlic into black garlic, it is soaked in sea salt brine and kept at a constant 60°C for 2-6 months. During this process, the garlic turns black. This very slow fermentation turns the garlic black and creates its unique, unmistakable aroma. It shows nuances of vanilla and plum, as well as caramel and balsamic vinegar, and also liquorice.
Black, fermented garlic flavors the limited Fleur de Sel from Ibiza and gives it an inimitable umami taste. Black garlic is versatile: in sauces, in aioli or even in hummus, it contributes significantly to culinary delight. But it also gives Mediterranean vegetables, a tomato tart, a zucchini quiche or tarte flambée that certain extra. The salt seasons grilled dishes as well as seafood.
Sal de Ibiza Fleur de Sel – harvested in salt pans
Fleur de Sel from Sal de Ibiza is considered one of the highest quality salts. It is the so-called flower of salt, the topmost layer that forms in salt pans as seawater evaporates. In addition to sufficient sun and light wind, humidity and, of course, the quality of the seawater are also crucial. The salt pans where Sal de Ibiza's Fleur de Sel is harvested are located in the nature park in the south of the island. The small, fragile crystals are unique in their texture and taste and contain over 80 minerals and trace elements. Fleur de Sel is a particularly mild salt. The stone pot from Sal de Ibiza comes with a measuring spoon and is ideal for always having Fleur de Sel on the table. Fleur de Sel is of course also suitable as a gift.
Mar Blau – Limited Edition with black garlic
The first limited edition from Sal de Ibiza was a pink salt pot, which supported the international organization Pink Ribbon with €1 for every pot sold. Overwhelmed by the success, which benefited breast cancer research, the team around Daniel Witte is now encouraged to create a new special edition every year and thus support a non-profit project. In 2019, it was the Isla Blanco edition, which donated €1 each to the Ibiza Preservation Fund to strengthen the idea of sustainability on the island. The donation for the 2020 Limited Edition goes to Plastic Free Ibiza. The goal is to create a movement with local measures to reverse the global plastics trend. The mission is to unite the energy and commitment of all those who want to protect our islands from plastic pollution. Awareness and action are the only ways to free ourselves from the consumption and waste habits that harm the environment so much.
