Chocolate without added sugar — but not sugar-free?
Chocolate without added sugar is by no means sugar-free chocolate. Sugar-free chocolate doesn't really exist, because cocoa naturally contains sugar. According to the Health Claim Regulation, chocolate may only be called sugar-free if the natural sugar content from the cocoa and any added milk does not exceed 0.5g/100g of chocolate. Chocolate is considered low in sugar if it contains no more than 5g of sugar per 100g of chocolate.
A "chocolate" with 100% cocoa content may not be called chocolate, as according to the Cocoa Regulation, chocolate must be a product of cocoa and sugar and/or milk. This is a bit confusing, but also somewhat understandable.
Chocolate — trending towards less sugar
Fortunately, there is a trend towards less sugar, and so there is now a lot of good chocolate without added sugar and cocoa bars with 100% cocoa content. Chocolates without industrial, refined sugar not only taste good to diabetics; by processing high-quality cocoa beans, the full taste of the fine cocoa with all its facets unfolds, and chocolate lovers appreciate that.
