Purissima 60% Almond Nougat & Raspberry by Tiroler Edle, fruity
Purissima 60% Almond Nougat & Raspberry by Tiroler Edle is a dark chocolate with a filling of almond nougat containing finely ground dried raspberries. Their acidity keeps the sweet almond fresh and provides a bright fruitiness to contrast the bitter shell.
Purissima 60% Almond Nougat & Raspberry is a filled chocolate bar from the Purissima line by Tiroler Edle, based in Landeck, Tyrol. Almost half of its fifty grams is made up of the filling. The number in the name refers to the cocoa content of the shell, which is at least 60 percent.
Sweet almond and the acidity of the raspberry
The dark shell breaks with a clear snap, revealing the almond nougat as a thick, soft layer that yields immediately upon the first bite.
The almond brings a mild, warm sweetness reminiscent of the scent of roasted almonds. Running through this sweetness is the raspberry, acting as a fine, consistent acidity that remains vibrant until the very last piece.
The bitter dark chocolate keeps the sweetness in check and gives the fruit a dark frame. This Purissima tastes creamy, fruity, and fresh all at once.
Roasted almonds, ground to a velvet finish
For a nougat, roasted almonds are ground finely with sugar until their natural oils make the mixture soft and smooth.
The longer it is ground, the finer the particles become and the more velvety the nougat melts in the mouth. Roasting brings out warm, slightly caramel notes that raw almonds barely possess, which pair well with the cocoa of the shell.
A pinch of salt and a little vanilla round off the bar; the salt brings the roasted notes to the forefront, and the vanilla sits gently underneath. Every bar is handcrafted.
The raspberry dry, the nougat soft
A ganache made of cream and chocolate readily absorbs fruit puree, whereas a nougat relies on the oil from the almonds and does not accept water. The raspberry must therefore be dried before it is added to the filling.
In this way, the fruit preserves its acidity and fragrance in a small space and distributes evenly throughout the mass. The chocolate with raspberries by Tiroler Edle takes a different path, using raspberry puree and raspberry brandy in a dark ganache.
There is no alcohol in this bar, making it suitable for children to enjoy as well. The raspberry likes the company of the bitter chocolate, and the almond ensures that they get along well.
Dark chocolate for coffee and dessert
The bar prefers to be stored in a cool, dry place, away from coffee and spices, as it quickly absorbs foreign odors. If you take it out of the refrigerator, the nougat will taste firm and the raspberry will be muted; letting it sit at room temperature for a while awakens both.
For afternoon coffee, the bitter shell adds depth, and alongside a glass of rosé sparkling wine, the acidity of the raspberry finds its match. Coarsely chopped and sprinkled over vanilla ice cream, it becomes a quick dessert.
Spicier, with a resinous trace, is the filled Purissima with stone pine salt. Those who wish to look beyond Tyrol will find other manufacturers in our chocolate bars section, and the entire assortment is gathered on the Tiroler Edle page.
