Double Caraway 45% Vol. Alcohol – Faude feine Brände

The Faude feine Brände Double Caraway 45 is a unique interpretation of the North German classic from the distillery at Kaiserstuhl. Distiller Florian has come up with something extraordinary for his double caraway as well.

Florian Faude has reinterpreted the somewhat old-fashioned North German spirits classic. The Baden variation of double caraway, which serves as a digestif, a spicy nightcap after a hearty meal, is finely balanced with caraway seeds, fennel, star anise, cumin, and cardamom. Coriander, orris root, and lemon peel help this South German reinterpretation of this traditional distillate achieve new moments of enjoyment, with the taste of caraway clearly taking center stage. Sweetened with a little candy sugar, which is responsible for the caramel-like color, the spicy notes merge into an impressive overall composition.

Faude Double Caraway – from the Black Forest

Caraway schnapps is probably the most sung-about ice-cold spirit, thanks to Die Toten Hosen. But there are big differences in caraway schnapps when it comes to botanicals and sugar content. With Faude Double Caraway, it's only 10g/l. The double caraway is produced by maceration, where the botanicals release their aroma into the neutral alcohol, and then it is distilled in a copper still. For caraway spirits like aquavit or kümmel, a minimum alcohol content of 30% Vol. is required, while a double caraway must have an alcohol content of at least 38%. The caraway distillate must primarily taste of caraway, but other spices may also be used.

"Brand" (Eau de Vie) vs. "Geist" (Spirit) – Florian explains

A spirit made from double caraway is not a "Brand" (eau de vie), but a "Geist" (spirit). "A 'Geist'," Florian explains, "opens up possibilities for the distiller to do familiar things differently and to play with the unknown." Unlike a "Brand," Florian uses ingredients that cannot be mashed and fermented due to their low sugar content, such as meadow caraway. "Here we take a piece of nature," Florian continues, "steep it in the purest grain alcohol so that it can release its full aroma into the alcohol, and then distill this flirtation after a short time. This way, only clear notes enter the distillate. What we save in time, we add in botanicals." With the good, soft water of the Black Forest, the "Geist" is then reduced to drinking strength (40% vol. alcohol), filled into classic 500ml bottles without the addition of coloring and without chill filtration. "The result: a highly harmonious paradox. Intensely spicy, immediately present, yet – multifaceted and light-footed.
