The Green Walnut Liqueur from Faude feine Brände is a cask-aged nut liqueur made from wild green walnuts, produced in the Kaiserstuhl region with 34% ABV. Deeply dark, nutty, and spicy – a digestif that truly shows its class when paired with dark chocolate and robust cheeses.

Green Walnut Liqueur is a cask-aged liqueur from Faude feine Brände made from hand-picked, wild-grown green walnuts. Harvested before St. John's Day, infused with herbs and spices, and aged for about a year in Sauternes barrels, it displays a deep dark color and a nutty, spicy aroma.

Walnut, spice, and a hint of caramel

Even in the nose, the Green Walnut Liqueur is deep, dark, and warm, with intense walnut notes, fine spice, and a touch of caramel.

In the glass, it glows an almost black-brown, like an old liqueur from a grandfather’s cupboard, and leaves an oily veil on the glass walls. The mere sight promises depth and whets the appetite for the first sip.

On the palate, it is full-bodied and soft – the walnut takes center stage, accompanied by a pleasant, subtle bitterness and the sweetness from the Sauternes barrel. The finish is long and spicy. Nutty, spicy, velvety – a liqueur with depth.

Green, unripe walnuts are an old liqueur tradition – known in Italy as Nocino, and in the Kaiserstuhl in Florian's own interpretation. The still-soft green husk provides fine tannins and a dark depth that a ripe nut could never offer. This is exactly what gives the Green Walnut Liqueur such character.

With dark chocolate and robust mountain cheese

Served neat over ice or as a digestif after a meal, the Green Walnut Liqueur is at its best, and it certainly has its place in desserts as well.

Paired with dark chocolate or robust mountain cheese, the nutty spice balances out the sweetness and the salt. Drizzled over vanilla ice cream or panna cotta, it elevates your simplest dessert, and at the bar, it adds a wintry note to an Old Fashioned. The Green Walnut Liqueur easily stands up to a piece of gingerbread or a chocolate tart.

Wild walnuts, harvested before St. John's Day

Florian Faude traditionally harvests the green walnuts before June 24th, when the shell is still soft and the fruit contains its full aroma.

“The nuts must be picked before St. John's Day, while they are still soft,” explains Florian. After maceration with herbs and spices, the liqueur matures for about a year in used Sauternes barrels, which impart color, fine wood notes, and an elegant sweetness.

Florian took over his parents' distillery in Bötzingen in 2006 and built his own distillery in 2017. This is how Faude Green Walnut Liqueur is created – nutty, cask-aged, and made entirely from regional ingredients. The liqueur is bottled at 34% ABV in a 0.5-liter bottle. Over an ice cube and for long winter evenings

At about 12 degrees Celsius (54°F) or poured over a large ice cube, its nutty aroma opens up the most. Once opened, it will keep for many months if stored in a cool, dark place. Faude feine Brände

Faude feine Brände ist die Hausbrennerei von Florian Faude in Bötzingen am Kaiserstuhl. Der gelernte Winzer und Brenner machte sich 2006 selbstständig und brennt heute klare Obstbrände, Geiste aus Frucht und Gemüse, dazu Gin, Whisky, Likör und Wermut. Rund neun Zehntel seiner Früchte wachsen in der Region, oft bei Erzeugern, die er persönlich kennt.
