Balsamico Bianco by Greenomic Delikatessen, light and mild

Balsamico Bianco by Greenomic Delikatessen is a white Italian balsamic vinegar made from grape must and wine vinegar, aged for one year in oak barrels. Its mild sweetness seasons vinaigrettes, asparagus, and white sauces without changing the color of the dish.

Balsamico Bianco is the white balsamic vinegar from Greenomic Delikatessen, produced in an Italian "acetaia," as the houses that age balsamic vinegar are known. A wooden cap and a handmade pourer sit on a 250-milliliter bottle, from which the Bianco pours straw-gold over a salad.

Light, mild, and with clear grape acidity

When poured, the Bianco is significantly thinner than a dark aceto. It runs down the leaf instead of sitting on top of it, coating the salad in a fine film.

The scent is that of white grapes, with the warm tone of the oak wood in which the Bianco spent its year lingering in the background. On the tongue, the acidity leads the way, followed only then by the sweetness of the reduced must—soft and without any roasted notes.

It is precisely this clarity that separates it from the dark Classic, which, with its depth, defines a sauce rather than accompanying it. Whenever the color of a dish matters, you reach for this bottle from Greenomic Delikatessen.

On asparagus, green salad, and white sauces

It belongs on boiled green asparagus just before serving, along with good olive oil and coarse salt, so the stalks retain their color. A green salad made of romaine, fennel, and sliced pear pairs just as well with it as a plate of mozzarella and tomatoes.

In a light sauce for fish or poultry, the Bianco replaces a splash of white wine, adding acidity without clouding the stock. Over shaved Parmigiano Reggiano, it adds a pleasant finishing touch, and it works overnight in a marinade for poultry until the meat becomes tender.

Over melon cubes, it finally shows that the sweetness and acidity come from the same grape. Add a spoonful of mascarpone, sprinkle with a few mint leaves, and three simple steps turn into a dessert for a warm evening on the terrace.

Why the white must does not darken

A dark balsamic owes its color to the must, which is left open in a kettle for hours and caramelizes in the process. For the Bianco, the white grape must remains over the fire for a shorter and gentler time so that it retains its hue before the wine vinegar is added.

Afterward, it goes into an oak barrel for one year, where wood and air smooth out its edges. Twelve months is short compared to vinegars aged for decades, but this one is not intended to be thick and dark.

Nothing more than white grape must and wine vinegar ends up on the label. Greenomic Delikatessen selects the houses for this themselves and lets them work in their own way, rather than dictating a pre-set recipe.

A vinaigrette that keeps asparagus light

At room temperature, the Bianco reveals its character most clearly; cold from the refrigerator, it appears flat and closed. Whisk it with olive oil, a spoonful of yogurt, and finely chopped chives to create a sauce that just barely thickens over the warm stalks.

In a dark cupboard, an opened bottle will last for many months without the fruitiness fading. Further varieties from the same producer can be found in the Balsamic range, along with pesto, oil, and pasta in the Greenomic Delikatessen collection.
