Ingo Holland's cardamom seeds come from Guatemala and are also known as clove pepper or allspice. With its exotic, citrusy, floral aromas, cardamom is perhaps the quintessential oriental spice from 1001 Nights. As a coffee spice, cardamom seeds refine freshly brewed coffee as well as classic Indian spiced tea (chai). Cardamom is an integral part of seasoning oriental spiced rice or Arabian milk pudding.

Cardamom pairs wonderfully with apples, pears, legumes, oranges, sweet potatoes, and other root vegetables. Lightly crush, then sauté or roast and grind before use.

Cardamom Seeds – from Guatemala

Cardamom seeds originally come from Indian cuisine, where they are still cultivated today in South India and Sri Lanka. However, they are also grown today in Guatemala, Tanzania, and Madagascar. The closed pale green seed pods of cardamom are harvested by hand just before full ripeness. At this point, the pods are still closed and preserve their special spicy-sweet aroma, which develops during drying. Cardamom seeds are easy to portion, and the seeds have already been removed from the pod. Already in ancient times, Romans and Greeks appreciated the sweet-spicy aroma, which was used in both savory and sweet cuisine. Its floral aroma completes any gingerbread spice, so this exciting spice is often associated with Christmas. However, it can be used all year round for rice and vegetable dishes, as well as curries.
