Königskind Chimichurri is the Argentine herb sauce made from fresh parsley, sunflower oil, onions, lime juice, garlic, and spices. Chimichurri is a classic Argentine herb sauce that has traditionally been served with Asado – the South American barbecue feast – since the 19th century. Königskind, from the Oberbergisches Land region, produces the sauce by hand according to the original principle. The classic Chimichurri Verde thrives on the aroma of parsley, here combined with sunflower oil, onions, lime juice, garlic, and spices.

Instead of the red wine vinegar typical in Argentina, lime juice provides the fresh acidity – a variation reminiscent of the Colombian-Mexican style and better suited for fish and white meat. With 6 ingredients, the recipe remains puristic and close to the original. 155g in a jar.

Green herb sauce with parsley and lime

Upon opening the jar, you are immediately met with the fresh, herbaceous parsley aroma, accompanied by a noticeable garlic note and a hint of lime zest. The color is a vibrant green – it glows light green when unrefrigerated, and darkens slightly after refrigeration. The consistency is thick, with visibly finely chopped parsley leaves and onion pieces, not puréed. The classic ratio is 3 parts parsley to 1 part garlic – this proportion determines the flavor profile of the sauce. This ensures every bite is rich in texture.

On the palate, the herbaceous depth of parsley is initially revealed, with onions adding a mild sweetness. Then the garlic introduces its warm note, and finally, the lime juice brings the zesty acidity that ties everything together. Salt and spices are subtle – the sauce is not a spicy BBQ variant, but rather an herb sauce that complements rather than overpowers the grilled food. For those who prefer more heat, a pinch of chili flakes can be added, which is a matter of taste.

What does Chimichurri go with?

The short answer: everything from the grill. In Argentina, the sauce has been a staple of Asado for generations – beef steak, grilled sausage (Chorizo), flank steak, entrecôte. It is not used as a marinade, but rather as a dip or topping, spooned over the meat after grilling. There's a reason for this: on a hot grill, delicate herbs burn in seconds and turn bitter.

We particularly enjoy the Königskind variant with grilled beef tenderloin or a medium-rare entrecôte (3 to 4 minutes per side over medium heat) – that's where the lime truly shines. Three partners harmonize especially well: lamb skewers, pan-fried salmon, grilled scallops. The sauce pairs perfectly with all three.

Vegans and vegetarians can serve it with grilled vegetables: bell peppers, zucchini, eggplant, or halloumi get a Mediterranean twist from the herb sauce. We also like it as a dip with fresh baguette or ciabatta, especially when there's some sauce left in the jar. For 4 people, 1 jar is easily enough for an entire Asado.

Once opened, the sauce keeps for 2 to 3 weeks in the refrigerator – it is important that the surface remains covered with a thin layer of oil. Stir once before serving and allow to warm up briefly at room temperature for the flavors to fully develop.
