Red Wine Enjoyment - a sensory experience

Diversity and Terroir: The vineyards where the vines for this red cuvée grow are among the warmest sites in South Tyrol and offer ideal conditions for great red wines. Not far from Lake Caldaro are the Manincor and Panholzerhof vineyards, two southeast-facing slopes at 250m above sea level, whose sandy loam soils are permeated by calcareous gravel and glacial rock deposits. Lagrein, Merlot, and Cabernet thrive here.

Production and Storage: Manincor stands for a symbiosis of historical heritage and modern technology. This approach not only guarantees quality but also sustainability and is evident in every glass of Il Conte. The biodynamically grown grapes are harvested by hand at their optimal ripeness and vinified separately. After blending, Il Conte matures for one year in oak barrels.

Serving Suggestion: This organic red wine offers a complex taste experience, combining power and elegance with a balance typical of Manincor's careful selection and blending. This wine is ideal for immediate enjoyment but can also be stored until 2029. It pairs excellently with spicy, Mediterranean appetizers and with roasted and grilled beef or lamb. A serving temperature of 16-18°C is recommended to bring out the wine's full aromas.

  • Sustainability as a principle: This red wine from the "Hand" wine line (symbolizing the hand that cultivates the soil, tends the vines, and harvests the grapes: uncomplicated wines, classic, clear, and accessible) embodies Manincor's biodynamic philosophy, reflected in its vegan certification and the Respekt-BIODYN seal, a testament to harmony with nature.

  • Vinification: The Lagrein (38%), Merlot (41%), Cabernet Sauvignon (21%) grapes are processed separately and fermented in a combination of oak barrels, cement tanks, and stainless steel tanks. After a ten-day maceration period, during which the skins are plunged daily, the wine ages for twelve months in oak barrels.

  • Versatile pairing options: Excellent with well-seasoned Mediterranean appetizers, perfect with hearty meat dishes or mature cheese.

  • Drinkability: Enjoy this wine, ideally slightly below room temperature, optimally from 2024 until the end of 2030.
