The smoked salt from Pfeffersack und Soehne is crafted in Denmark, where sea salt lies in beechwood smoke for an extended period—until the wood has imparted its characteristic reddish-brown color and a hearty, sweet note to the grains. Genuine smoking instead of shortcuts: cheaper smoked salts are simply sprayed with aroma and colored with caramel.

Mild, hearty, and with a sweet undertone

Beechwood smokes in a warm and friendly way: a gentle scent of smoke rises from the open jar, reminiscent of an old smokehouse; in food, it begins with the crisp saltiness of sea salt, followed by a well-rounded, slightly sweet smoky depth without any bitterness.

In the trio of smoking woods, beech sits between light birch and robust oak—mild enough for every day, characterful enough for a special occasion. Scandinavians have been smoking over this wood for centuries; one taste explains why they have stuck with it.

It is packaged in coarse form in a cylindrical ceramic jar with a cork lid from the Westerwald region—handcrafted from clay from local pits, light-proof and aroma-protective. Before seasoning, the crystals can be finely ground in a mortar or added coarsely directly to the dish.
