The raw cane sugar caramelizes the sweetness, the apple vinegar keeps it in check, and the red chili peppers provide a mild warmth underneath. Fruity, savory, piquant – it captures the palate without ever becoming hot. The tomato puree gives the relish body, ensuring it stays on the bun rather than running off. It glows in a deep red in the jar, thick and chunky at the same time. It loves bold flavors and goes well with everything that comes off the grill.

Since 2004, Stokes has been cooking in small batches in Suffolk, England, using select ingredients and no artificial flavorings.
Good taste starts with good ingredients, as Rick Sheepshanks has maintained from the beginning. He started with mayonnaise and tomato ketchup, and today over 60 sauces are created in the old stable kitchens of Rendlesham Hall. The name comes from the nearby Staverton forest with its ancient oaks – "Staverton and Oaks" was shortened to Stokes. For the relish, the peppers and onions are sautéed in sunflower oil, caramelized with diced tomatoes and raw cane sugar, and deglazed with apple vinegar.
The passion put into the work at Rendlesham is evident in the private animal sanctuary Rick established in 2008, where over 250 animals live today. In 2016, Stokes was counted among Britain’s CoolBrands alongside Apple and Spotify. Cooked in small batches and tested according to BRCGS food standards, the company has remained true to itself for over 20 years.
