Sauvignon Blanc 2024 is a dry organic estate wine from the Karl May winery in Rheinhessen. It is fragrant with notes of green apple, gooseberry, and scented elderflower, tasting finely spiced and fresh. Excellent Sauvignon Blanc has long since ceased to be found only in New Zealand or South Africa; it is also thriving in the Wonnegau region.
Green apple, gooseberry, elderflower
On the nose, green apple and gooseberry, accompanied by the typical, fragrant elderflower and a hint of cassis.
On the palate, the wine is dry, finely spiced, and fresh, with a medium body, good acidity balance, and moderate alcohol. The 12 percent alcohol and 2.5 grams of residual sugar keep it lean and lively; the aromatics remain clear and animating. A wine that does not artificially boost its freshness, but rather derives it from ripe grapes. You can sense its warm origin; the Wonnegau gives it ripe fruit without losing its typical spice.
We serve it with fish, poultry, and Asian cuisine
Well-chilled at 8 to 10 degrees and served in a good white wine glass, this Sauvignon Blanc reveals its full fragrance.
Its aromatic profile makes it a favorite for Asian cuisine, fish and seafood, or light poultry such as lemon chicken. It is also a delight with goat cheese and a touch of honey, where freshness and spice play beautifully together. In summer, it is just as perfect as an aperitif on the terrace as it is with a light dinner; it is an uncomplicated wine that requires no grand occasion and yet still makes an impression. The Gelber Muskateller from the Karl May winery is even more aromatic and floral.
Spontaneously fermented by Fritz and Peter May
The vines for the Sauvignon Blanc grow on various sites on sandy loess-loam soil and are farmed organically.
To ensure the grapes become ripe and aromatic, Fritz and Peter May prune early, defoliate the grape zone for more sun, and reduce yields with a green harvest. With Sauvignon Blanc in particular, the right harvest time is crucial; too early and it becomes grassy, too late and it loses its tension. It is harvested selectively by hand, often in several passes.
In the cellar, it is pressed gently, the must is fermented spontaneously, remains on the lees for a long time, and matures in stainless steel tanks, which preserves the fresh fruit. No wood is intentionally used here, as the fragrant aromatics of this grape variety are meant to reach the glass unadorned.
The fact that the cassis and elderflower notes emerge so clearly is no accident, but the result of careful harvesting and quiet fermentation. This organic white wine proves that a nuanced, cool Sauvignon can also be achieved in the warm Rheinhessen region.
