The vines for this white wine grow in various sites on sandy loess-loam soil and are farmed organically.
To ensure the grapes become ripe and aromatic, Fritz and Peter May prune early, remove leaves in the grape zone for more sun, and reduce yields with a green harvest. With Sauvignon Blanc, the timing of the harvest is crucial, as it determines whether the wine becomes grassy or delicately fruity. The grapes are harvested selectively by hand, often in several passes.
In the cellar, the grapes are gently pressed, the must is fermented spontaneously, remains on the lees for a long time, and matures in stainless steel tanks, which preserves the fresh fruit. No wood is intentionally used so that the fragrant aromatics of the grape variety remain clear and unadulterated.
The result is a wine that retains its tension despite the ripe fruit of the warm vintage. You get a lot of aroma for an everyday price—an organic white wine that makes you crave the next glass.
