Harmony and challenge: The 2023 vintage was challenging, characterized by volatile weather conditions ranging from a wet spring to a hot and dry summer. Despite these difficulties, the grapes reached perfect ripeness, which is reflected in the balanced combination of physiological maturity, sugar, and acidity. The wine is characterized by ripe fruit aromas and a moderate alcohol content, making it an ideal companion for relaxed moments.
Superb processing: After selective harvesting, the destemmed grapes were left in the press for four hours to extract as much aroma and structure from the skins as possible. The pressing process was conducted very slowly and gently, as finesse is the top priority. Fermentation was spontaneous, using natural, grape-derived yeasts in wooden barrels of various sizes. Subsequently, the wine matured for nine months on the fine lees, further refining its aromas and flavor. Drinkable until the end of 2031.
Focus on biodynamics: Sophie Chardonnay is a delight for the palate, produced biodynamically and vegan according to the strict Respekt-BIODYN guidelines. This emphasizes the character of the terroir, reflecting the philosophy of the Manincor winery, which is committed to biodynamic wine production.

Its aroma combines fruity notes of apricots and oranges with floral hints of acacia and linden blossoms. In its depth, it unfolds a striking minerality reminiscent of wet stone.
