Winemaking – Knipser Winery
The Pinot Gris from the Knipser winery comes from two vineyard sites characterized by deep loess deposits over a limestone subsoil. The selective hand-harvesting of the Pinot Gris grapes in autumn typically takes place over several passes to ensure optimally ripe yields. At the winery, all grapes are destemmed. The resulting mash remains cooled in the tank press overnight, protected from oxygen, before being gently pressed. Fermentation takes place at temperature-controlled levels below 20°C in stainless steel tanks, which preserves the fruitiness as well as the typicity of the grape variety. The wine is largely matured on its fine lees in stainless steel, while a portion of the Pinot Gris is aged in used barriques, lending the estate wine greater body and complexity.
