The Knipser Sauvignon Blanc 2024 from Weingut Knipser in Laumersheim in the Pfalz is an aromatic, dry VDP estate wine and one of the most popular wines from the Knipser winery. It is characterized by aromas of green apples and green gooseberries, paired with juicy notes of ripe peaches, complemented by wonderfully fragrant elderflower. A prime example of a successful Sauvignon Blanc: fragrant, not too loud, strikingly elegant, with a good balance between ripe fruit and animating, vegetative freshness.
Knipser Winemaking – at Johannishof
The vines for this estate wine from Weingut Knipser, also known as Johannishof, are located in various vineyards with limestone soils or sandy-gravelly soils. The selective manual harvest of the Sauvignon Blanc grapes in autumn usually takes place in several passes to ensure optimally ripe grapes are picked. At the winery, all grapes are destemmed, meaning the stems are removed. The resulting mash remains chilled overnight in the tank press, excluding oxygen, before being gently pressed. Fermentation takes place at a temperature-controlled below 20°C in stainless steel tanks, which preserves the fruitiness and the varietal typicality. The aging on the fine lees also takes place in stainless steel tanks, resulting in a fine, elegant, fresh wine.
