Hand-harvested and stainless steel at the hands of Fritz and Peter May
The vines for the Pinot Blanc grow in various vineyards on sandy loess-loam soil and are farmed organically.
Pinot Blanc is considered the diplomat among white wines because it gets along with almost everything and never clashes with the food. It is precisely this restraint that makes it so versatile; it complements the dish rather than standing in front of it. In the mild climate of the Wonnegau region, it receives enough sun to develop ripe fruit without ever seeming thin.
To ensure the grapes ripen properly, Fritz and Peter May prune early, defoliate the grape zone for more sun, and reduce yields with a green harvest in early summer. The harvest is selective and done by hand, often in multiple passes.
In the cellar, the grapes are gently pressed, the must is spontaneously fermented, kept on the lees for a long time, and aged in stainless steel tanks, which preserves its clear, fresh character. No wood, no makeup, just the pure fruit of the grape variety. The May family has been running the winery in the seventh generation since 1815, working on about 35 hectares between Bechtheim, Westhofen, and Osthofen.
