Questions about Sardines with Andaliman Pepper?

We are happy to help you with La Perle des Dieux.

Sardines with Andaliman pepper, floral and citrus-fresh

La Perle des Dieux’s Sardines with Andaliman pepper, in French "Sardines poivre andaliman," are sardines in extra virgin olive oil featuring the wild Andaliman berry from Sumatra. A recipe with floral and citrus seasoning – awarded the Prix des Épicures in 2025.

Sardines with Andaliman pepper are flavored oil-packed sardines from the La Perle des Dieux cannery in Saint-Gilles-Croix-de-Vie in the Vendée, on the French Atlantic coast. Botanically, Andaliman is not a pepper, but a wild berry from northern Sumatra related to Szechuan pepper – floral, citrusy, with a fine tingle.

Aroma of rose, lemon, and mandarin

Andaliman brings a surprisingly floral aroma with notes of rose, lemon, and mandarin, accompanied by a soft, tingling sensation on the tongue.

The mild sweetness of the sardine perfectly carries this seasoning, while the extra virgin olive oil rounds it out. Floral, citrusy, and finely tingling – a sardine unlike any you have tasted before. In 2025, it won the Silver Trophy in the "Sea and Fisheries" category at the Prix des Épicures.

On bread, with rice, in Asian cuisine

The citrus seasoning pairs beautifully with Far Eastern flavors: on warm rice, in a bowl, or simply on toasted bread.

Served on rice with a little lime and cilantro, the tingling effect really comes into its own, paired with a chilled Riesling or a Grüner Veltliner. The Andaliman also displays its freshness when eaten plain on a baguette. You can find a large selection of other sardines in olive oil in our shop.

Hand-harvested by the Batak, packed in the Vendée

The Andaliman is hand-harvested by the Batak people in the mountain forests of North Sumatra – a rare spice for a special tin.

La Perle des Dieux is arguably the most feminine cannery in the industry, founded in 2005 by Claudie Vardelle and Philippe Gendreau, whose family has been canning fish for four generations. The sardines are cleaned and packed by hand while fresh from the catch. The company is known for its vintage sardines from La Perle des Dieux; those who like it spicy can also find sardines with Madagascar pepper.
