Light Acacia Honey from Robinia Blossoms in Terre Roveresche

The Miele di Acacia from Azienda Guerrieri is a light acacia honey from the Marche region, harvested from robinia blossoms in the spring. Mild, delicately floral, and almost clear in the jar. Not a blossom blend like the Millefiori from the same producer, but a single-varietal honey that is not produced every year.

Miele di Acacia from Azienda Guerrieri is an Italian acacia honey from Terre Roveresche in the Marche region, harvested from the robinia trees along the Metauro River. Botanically, it comes from the black locust (Robinia pseudoacacia), which blooms in May – which is why beekeepers often call it robinia honey. Unlike the bolder wildflower honey, this acacia honey is light, almost water-clear, with a delicate, floral sweetness.

Light as amber, delicate in sweetness

In the jar, the Miele di Acacia shows a pale gold, almost translucent hue. In taste, it is delicate, floral, and fragrant, with barely any bitterness and none of the spice of a forest honey.

A hint of vanilla resonates, sometimes with a subtle aroma of the acacia blossom itself – delicate, floral, and never overpowering. A characteristic of acacia honey: it remains liquid for an exceptionally long time, often over a year, because its high fructose content delays crystallization. In the spoon, the Miele di Acacia flows like liquid amber light, whereas the Millefiori from the same producer usually sets much faster.

On warm flatbread, with mild goat cheese

Its mild character makes this acacia honey a partner for delicate flavors that a stronger honey would overpower. It never insists on taking center stage.

Pure, on warm flatbread with butter, it is at its purest, without any competition. With young fresh goat cheese or creamy Robiola, it creates a subtle contrast between milky acidity and floral sweetness – a combination for which understated honey varieties are made. From the Azienda Guerrieri range, a glass of Bianchello del Metauro pairs beautifully, either still or as an aperitif.

Its restraint also pays off in the kitchen: in a dressing with lemon and olive oil, as a touch of sweetness in a light vinaigrette for arugula and Parmesan, or as a final drizzle over warm burrata with black pepper.

Five generations on the banks of the Metauro

The Guerrieri family has been managing their estate in Terre Roveresche near Pesaro since 1800 – now in the fifth and sixth generations.

Luca Guerrieri manages the farm together with his children, Maria Giulia and Alberto, on 207 hectares between vineyards, olive groves, and near-natural meadows along the Metauro. The bees are the only livestock on the farm – “free animals that act like environmental thermometers,” as Luca describes them. The robinia does not bloom strongly enough for a single-varietal honey every year; in some years, there is only the Millefiori, and the Miele di Acacia is simply not produced.

Around 40 permanent employees keep the operation running throughout the year, some already in their second generation working alongside the family. Harvesting, spinning, and bottling are done by hand into 250-gram jars, “because to cultivate the earth, you must know the past,” is the Guerrieri motto – a sentiment that also applies to their natural bee pastures. Since 1996, the farm has also been a registered educational farm in the region. Little fanfare, lots of manual labor.

A spoonful for tea, breakfast, or vinaigrette

If you store the Miele di Acacia in a dark, dry place at room temperature, it will remain liquid and spreadable in its 250g jar for months – a spoonful is enough for tea, breakfast, or the finishing touch of sweetness in a vinaigrette. Should it crystallize, a water bath at no more than 40 degrees for 5 to 10 minutes will make it flow again. Tasted side-by-side, the Miele di Acacia and the spicier Miele Millefiori from the same house show just how differently two honey varieties from the same landscape can taste.
