Fred Loimer – Verjus Green Juice – Organic Quality
Fred Loimer Verjus is a sour juice produced by pressing unripe green grapes. The verjus has aromas of fresh grape must, fresh meadow herbs, and crisp apples. On the palate, it is fresh and fruity, with a lively and stimulating acidity.
Verjus is not only refreshing when mixed with sparkling water in a 1:10 ratio but is also highly popular as a mild vinegar substitute. Verjus is also used in the kitchen for refining soups or sauces, pickling vegetables, and marinating poultry.
Fred Loimer says about his Verjus: "Intense aroma of fresh grape juice, vibrant acidity on the palate, like a bite into a crisp Granny Smith apple, apple slices with lemon, creamy texture with salty veins, the piquant acidity lingers long and delicately, a wonderful refreshment pure or spritzed."
It is often used by people with histamine intolerance. Once opened, the bottle should be stored in the refrigerator and consumed within 3-4 weeks.
Production – Verjus
The grapes for the Verjus were harvested unripe and still firm at the end of July 2024. The early harvest is important so that not too much sugar has yet formed in the grapes. After a short settling period, during which the solid components can sink to the bottom, the juice is gently filtered and briefly pasteurized before being bottled.
