Questions about Lobster Mousse with Cognac?

We are happy to help you with la belle-iloise.

Lobster Mousse with Cognac by la belle-iloise from Quiberon

Lobster Mousse with Cognac by la belle-iloise is a fine spread from Brittany in which lobster is the primary ingredient. Egg yolk binds the mixture like a mayonnaise, carrot gives it its warm color, and the cognac adds a subtle underlying warmth.

Lobster Mousse with Cognac is a shellfish cream from la belle-iloise in Quiberon, Brittany. In addition to lobster, the label lists fish, shrimp, and egg yolk, along with carrot, a spoonful of tomato paste, and cognac, which elevates this small tin above a simple bread spread.

Shellfish, egg, and a splash of brandy

The first note is sweet and salty at the same time, as only a crustacean boiled in its own shell can achieve. Shrimp intensify this note, and the fish in the base gives the mixture body.

The egg yolk binds everything into a smooth mousse and provides the velvety texture a spread requires. The carrot contributes a faint sweetness and that warm orange hue familiar from the shell of a boiled lobster.

Only at the very end does the cognac make itself known, more as a warmth than an alcohol, and this soft touch makes the mousse festive. A splash of spirit vinegar provides a counterpoint to ensure the richness doesn't become heavy.

On baguette, under pasta, in fish soup

Spread in a thin layer on toasted baguette, this mousse is perfect for an aperitif, topped with a sprig of dill and a squeeze of lemon. For four guests, plan on two to three slices per person.

Stirred into hot pasta with a little pasta water to loosen it, a spoonful makes a sauce in two minutes that would otherwise take hours on the stove. A spoonful also works well in Breton fish soup, where it binds the broth and rounds it off. Take the tin out of the refrigerator in good time, as the aroma becomes significantly more robust at room temperature.

Served with pan-seared prime fish like turbot or sole, a spoonful placed next to the fillet replaces any other sauce. In a small puff pastry shell, briefly baked, it becomes an appetizer that looks like more effort than it costs. Pair this with a dry white wine from the Loire Valley, served chilled.

Why the lobster brings its shell

In lobster, a large part of the aroma resides in the shell, which releases its pigments and fragrance when heated. This is exactly what classic French shellfish sauces are based on, and it is precisely what this mousse is based on as well.

At la belle-iloise, the base is prepared with oil and tomato paste, thickened with cassava starch, and filled into the tin before heat makes it shelf-stable. The cognac is added early in the process because it dissolves aromas that do not dissolve in water alone. Guar gum holds the finished mixture together so that it remains smooth even after months in the pantry.

In addition to sardines, la belle-iloise offers a range of such creams, each with a different dweller of the sea at its center. The finer, herb-forward side is showcased by the Salmon Cream with Tarragon, which uses anise instead of cognac.

A little luxury from the pantry

Once opened, the mousse will keep for one to two days in the refrigerator if covered; unopened, the tin can sit on the shelf for years. Other fish spreads and creams can be found alongside it, and the entire range from la belle-iloise can be found in the selection from Quiberon.
